Thrillist is where I learned of the Boner Burger at Animal after a friend of mine showed me the article. Upon tasting the burger, I was astonished with the impactful flavor, and basked in the glory of the dripping bone marrow fat and 420 sauce.
I do not know Jeff Miller at Thrillist, but it seemed to me that he was very excited about Animal having a secret menu item. Apparently this was a huge deal to him as I read his article (http://www.thrillist.com/eat/los-angeles/mid-wilshire/animal-secret-off-menu-burger-best-la-restaurants).
I could not help but be overcome with the same excitement as Jeff, so I knew I had to try the only burger available at Animal, which is off-menu, and apparently not a well-kept secret. The burger packs a ton of flavor, and is very good. It is smaller than what I like but that does not take away from its deliciousness.
It’s called the Boner Burger because there’s bone marrow ground into the meat with chuck and short rib. It’s on rye with Animal’s 420 sauce, Monterey Jack mixed with roasted poblanos, and grilled red onions. I had never eaten bone marrow before, and after the vegan burgers I’d had a couple of weeks earlier, this was the meat I needed.
The steak flavor comes through right away. It was a nice pink medium rare, greasy, cheesy and dripping everywhere. The crust of the bread seems salted, which brings out the meat. I couldn’t pick out the bone marrow on its own. The kitchen told me it’s there for fat, to keep the burger juicy, and it did. The edges of the toasted rye were hard enough to cut my mouth, but the middle softened up from all the juice.
It’s a secret menu item, so you have to know to ask. Animal is on Fairfax, just north of Beverly.
