Ingredients
- - 1lb Ground Beef
- - 1 Whole Onion
- - 1 or 2 Eggs
- - 1-2 serving worth of Lundberg Long Grain White Rice [Cooked]
- - 1 tablespoon butter
- - Salt
- - Ground Black Pepper
- - Lemon Pepper
- - Garlic Powder
- - 1/2 cup of Pasta sauce (for glaze)
- - 3-4 table spoons of Tate + Lyle Raw Sugar
- - Parsley Flake (as much as you want)
Directions
- - Put the rice on to cook. I have made meatloaf before without cooking the rice first, and it resulted in the rice being hard. So cook it.
- - Sauteed the onions in a pan, add salt. I did not have fresh garlic so I used garlic powder. Only get the onions translucent but still crisp, no soggy onions.
- - Once the rice is done, let it cool, then transfer it to a large mixing bowl.
- - Add egg(s), and sauteed onions to rice
- - Season to your desire, I used parsley flakes, Lemon Pepper, Garlic Powder, and Meat District Co.'s Dry Rub (see link below)
- - Add thawed Meat
- - Mix together
- - Mode mixture into a loaf shape, and transfer to the dish you're going to bake it in.
Glaze
- - add 1/2 cup of pasta sauce, tomato paste OR ketchup (whichever you have)
- - add Raw sugar (or brown sugar is fine)
- - add mustard
- - season with salt, pepper, lemon pepper, and/or whatever else you want
- - stir well (until sugar seems dissolved
- - spread just about half of the (but not all) glaze over uncooked meatloaf
Cooking
- You should've had the oven pre-heating at 350, but if you haven't yet, heat oven to 350. Once the oven is heated place the glazed meatloaf in the oven uncovered. Cook for 45-50 minutes. After 45 or so minutes, spread the remaining glaze over the meatloaf, then continue cooking for another 20-25 minutes.
Notes
- I honestly cannot cook. I sort of just made this up on the fly whilst watching Laura Vitale. I did not have everything she had, so I substituted a LOOOOOOOOOT of things.
