Before dropping off an RV in Clarksville, Indiana, I stopped in Louisville, Kentucky, to try a Hot Brown for the first time, at J. Graham’s Café inside the Brown Hotel. I had heard about the dish for years, and the cheese sauce and bread made the experience worthwhile.
The sauce was incredible, and the bread was exactly what I wanted in the dish. My reservation was the bacon. In this version, it felt unnecessary rather than essential to what I enjoyed. I wondered whether thicker-cut bacon might bring more to it, but that is a possibility I would need another order to test.
This first Hot Brown gave me a reason to keep exploring the dish. The strongest parts were already clear; the bacon left me with a question for the next stop.
